A commercial proofer is an essential tool if you've got a bakery in Canada or want to make fresh dough for bread, rolls, or pastries. There are 3 main types to choose from: the standard proofer, the proofer holding cabinet, and the retarder proofer, which includes a refrigeration system. All are designed to create the ideal temperature and humidity for dough to rise before baking. Proofers are available in a variety of styles, including reach-in, roll-in, and pass-through models.

A roll-in proofer cabinet lets you roll in a full rack of pans, saving time and reducing energy usage. Instead of loading pans one at a time, you simply roll in the rack and close the door. These come in one, two, or three-section models depending on your production volume.

A retarder proofer combines refrigeration and proofing in a single unit. It keeps dough at a safe temperature until you're ready to proof it. These units allow for scheduled proofing and are ideal for products like bread and bagels. Most are roll-in compatible for added convenience.

Proofer/holding cabinets serve dual purposes—after proofing, they maintain the dough at holding temperature until it's ready to bake. This is especially helpful in busy bakeries where timing is critical.
