Combi Ovens

A combi oven is one of the most versatile commercial ovens available. It allows you to steam, bake, or combine both methods simultaneously, making it a popular choice in restaurants, bakeries, cafés, and bistros across Canada. These ovens can handle a wide variety of foods including vegetables, cookies, casseroles, and seafood. The convection heat ensures even cooking with no cold spots, while the steam function helps retain moisture and prevents food from drying out. Combi ovens are typically categorized by the size of pans they accommodate. Full-size ovens accept standard 18" x 26" sheet pans, while half-size ovens are designed for 18" x 13" pans. Most units are also compatible with full-size hotel pans or steam table pans, which measure 12" x 20".

The number of pans a combi oven can hold depends on its interior dimensions and the number of available pan levels. It's worth noting that filling every pan level may reduce air circulation and impact cooking performance. For example, in a unit with six pan levels, it's often recommended not to fill all levels at once to maintain even airflow and optimal results.

Combi ovens also vary in control types: touch screen, manual, and digital. Touch screen controls are usually found on premium models, offering precise cooking settings, self-regulating features, and real-time adjustments to ensure consistent outcomes.

Manual controls provide hands-on operation of key settings like time, temperature, and humidity - ideal for chefs who prefer full control over the cooking process.

Digital controls combine the best of both worlds. These systems often feature physical knobs or buttons alongside a digital display and may include programmable cooking cycles for added convenience.
